Cranberry Kumquat Cake
You’ll Need:
- 3 Cups Flour
- 2 tsp Baking Soda
- 3 Large Eggs
- 1 Cup Oil
- 2 Cups Sugar
- 1 Cup Dried Cranberries
- 1 Cup Chopped Kumquats
- 1 20 oz. Can Crushed Pineapple
- Powdered Sugar (Optional)
Kumquats – bite size oranges. You’ll find them in pint size packages in the produce department of your local grocery store.
directions:
Preheat oven to 350 degrees.
Lightly grease and flour a bundt pan.
- In a large bowl mix together eggs, sugar, and oil.
- Add flour and baking soda to mixture.
- Chop kumquats, setting aside a few to slice and put on top of the cake after baking.
- Add chopped kumquats, dried cranberries, and entire can of pineapple to mixture. Mix well.
- Pour cake mix into a greased and floured cake pan.
- Bake at 350 for approximately one hour. Cake is done when knife is inserted into cake and it comes out clean.
- Allow cake to cool thoroughly.
- Sprinkle with powdered sugar.
- Slice remaining kumquats and place on top of cake. (as shown in above photo)
- Serve
Moist and delicious! Perfect served with coffee for breakfast,
or as an after dinner dessert!
