Cranberry Kumquat Cake

 

 

You’ll Need:

  • 3 Cups Flour
  • 2 tsp Baking Soda
  • 3 Large Eggs
  • 1 Cup Oil
  • 2 Cups Sugar
  • 1 Cup Dried Cranberries
  • 1 Cup Chopped Kumquats
  • 1  20 oz. Can Crushed Pineapple
  • Powdered Sugar (Optional)

 

Kumquats – bite size oranges.  You’ll find them in pint size packages in the produce department of your local grocery store.

 

directions:

Preheat oven to 350 degrees.

Lightly grease and flour a bundt pan.

  1. In a large bowl mix together eggs, sugar, and oil.
  2. Add flour and baking soda to mixture.
  3. Chop kumquats, setting aside a few to slice and put on top of the cake after baking. 
  4. Add chopped kumquats, dried cranberries, and entire can of pineapple to mixture. Mix well.
  5. Pour cake mix into a greased and floured cake pan.
  6. Bake at 350 for approximately one hour.  Cake is done when knife is inserted into cake and it comes out clean.
  7. Allow cake to cool thoroughly.
  8. Sprinkle with powdered sugar.  
  9. Slice remaining kumquats and place on top of cake. (as shown in above photo)
  10. Serve
Moist and delicious!  Perfect served with coffee for breakfast,
or as an after dinner dessert!
